The Kiwi Baby Kale Salad is a salad of necessity. A pile of kiwi and a huge bag of baby kale were threatening to go unused, so I got frisky. Not much too it, but it’s tart, creamy and mad healthy. More after the jump …
3 c baby kale
1/2 c goat cheese
3 Tbsp walnut oil (or olive, or canola …)
2 Tbsp ume plum vinegar
1 Tbsp dried chile flakes
I get big bags of organic baby kale at Costco, but you might also kind the stuff at farmer’s markets. You could sub in ribbons of Tuscan kale, if the hunt for baby is unsuccessful.
Whisk the oil and vinegar together and put the mixture in the bottle of a nice-looking bowl. Put the greens in the bowl. Peel the kiwis, halve the things and cut them into gorgeous semi-circles. Layer these over the greens and then crumble the goat cheese on top. Put a pile of the hot stuff in the middle.
Toss, serve, and feel your lifeforce increase. Don’t let your newfound powers go to your head.
