Commitment to a cause doesn’t even begin to describe Jiro Ono’s obsession with perfecting the art of sushi making. Many would argue he’s already there but the 85 year old isn’t planning on kicking back just yet. The 3 star michelin restaurant he runs out of Ginza station has just ten seats which means you may be waiting a lifetime to taste his food, a menu which includes octopus massaged for 5o minutes. That’s relaxation.
