The man with the serious face, Tom Aikens is the youngest British chef to hold two Michelin stars, awarded for his work at Pied à Terre in the 90s. Having previously worked under food dons Joël Robuchon and Pierre Koffmann he currently runs ‘Tom Aikens’ in Chelsea. In this video from he talks about the ingredients and inspiration behind his spring menu and cooks his favourite dish of the season; poached pheasant egg, smoked breadcrumbs and garlic soup.
