Umami is a tough flavor to describe, but a dab of ume plum vinegar on your tongue will give inklings of its complexities. The fermented finery is made from pickled Japanese plums, making it salty and a little sweet. It is perfect mixed with honey and tossed with fruit for this perfect Memorial Day fruit salad.

1 c sliced strawberries
1/2 c blueberries
2 tsp ume plum vinegar
1 tbsp honey

Put the sliced strawberries and blueberries in a bowl. In a separate bowl, combine the honey and vinegar and whisk together. Pour the mixture over the fruit and toss to incorporate. That is all. This stuff will disappear quickly and you will want to slurp the juice from the bottom of the bowl.
