October will see the release of Phaidon’s ‘Fäviken‘ a look at the legendary Fäviken Magasinet restaurant in Sweden. In a remote, isolated area favoured by skiers, 600km North of Stockholm, the restaurant is located in an old farmhouse and seats just 12. Head chef Magnus Nilsson favours simpler cooking methods. Raw ingredients, cooking over coals, pickling and drying produce during winter months to preserve seasonal and local produce, which, given the location, is always something fascinating. Black grouse, crispy lichens, birchsap, wild raspberries…the kind of next level eating people drive hundreds of miles for.
