The San Pellegrino World’s 50 Best Restaurants 2013 list has just been released and with it comes the news that Copenhagen’s lauded Noma restaurant has been dethroned by Spain’s El Celler de Can Roca, establishing the Catalonian restaurant as the strongest in the game in 2013. It’s a highly regarded compilation, and one that encourages competition not only between chefs but the restaurants and cuisines that elevate the establishments above one another. Executive chef Jean Roca and his two brothers create avant-garde dishes which see the wines accompanied by music and video and desserts flavored with an ingredient list that reads like that of a perfume bottle.
