Binging with Babish is back with another delicious culinary movie mash-up. This time, host Oliver teaches us how to make Puerco Pibil from Once Upon a Time in Mexico — a movie which "convinced a fifteen-year-old Babish that he could not only make movies, but cook as well."
Babish starts by preparing the meat's marinade, making sure to test out the tequila before adding it to the mixture. He then bakes the whole thing in banana leaves for four hours, resulting in a ridiculously tender cut of pork.
Babish first serves it with plain rice, as they do in the movie. He then makes a taco from the leftovers, advising viewers to always double wrap your tortillas "for safety."
