"The Nordic Explorer” reveals Danish chef Søren Westh’s journey in trying to revolutionize the food industry, inspired by sustainable thinking and the concept of “cradle to cradle.” Alongside training as a sous-chef at world renowned restaurant NOMA in Copenhagen, he co-ran the Nordic Food Lab along with the Danish government. The non-profit, open-source organization investigates food diversity, and has created diets for patients in hospital, among other forward-thinking concepts.
